Atkins question regarding oils?
I was looking at Atkins and this is what they have on the induction phase:
“Fats and Oils
There are no carbs here, but keep in mind that the serving size is approximately 1 tablespoon.
1.Butter
2.Mayonnaise – make sure it has no added sugar
3.Olive oil
4.Vegetable oils – Those labeled “cold pressed” or “expeller pressed” are especially good and olive oil is one of the best.
◦Canola*
◦Walnut
◦Soybean*
◦Grape seed*
◦Sesame
◦Sunflower*
◦Safflower*
*Do not allow any oils to reach overly high temperatures when cooking. Use olive oil for sautéing only. Use walnut or sesame oil to dress cooked veggies or salad, but not for cooking.”
Does that mean (FOR EXAMPLE) that I cannot fry chicken? What happens when it does reach a high temperature?
It doesn’t state vegetable oil – so can I assume that I’m not able to eat it?
I’m sorry but I’m not really understanding your question.
Yes you can fry chicken (but not with a floured breading). I recommend using coconut oil for high temperature cooking. Lard that hasn’t been hydrogenated is also a good option but hard to find. Rendered animal fats, like bacon grease is another option.
Coconut oil will not form trans-fatty acids, oxidize, nor breakdown at high temperature unlike fragile polyunsaturated oils (vegetable oils)
I am shocked that coconut oil & lard aren’t included on the website
